Schalk grew up in Port Elizabeth, then moved to Hermanus to study at Warwicks chef school.
Throughout his kitchen experiences he learned to respect the ingredients you work with.
He is someone who pays detailed attention to where his ingredients come from and cooking ingredients guided by the seasons and the environment around us. He believes that ingredients should speak for themselves and us as chefs are there to showcase the ingredients and not ourselves. He is excited to learn continuously by developing, experimenting and testing recipes.
